Round Up Muffins - Green Tea and Red Beans

What a week!
This week started with a job that will see me through to 3 weeks of
intensive late late nights - I just completed week 1 and have 2
more to go. Most of the entries for Muffin Monday flooded in at the
same time. I have a mail notifier that goes *Bing!*
whenever I get new mail so while I'm working, I'm also sometimes
hearing *Bing!
Bing!
Bing!*
in the background and it made me glad to know that I now have a
well balanced life and people want to take part in my event!

Green Tea muffins has been sitting in my head for a long time now
and I've finally made it to commemorate the round up of a very
successful first Muffin Monday! Also I've been wondering what to
make for Zorra's St
Pat's Day: Green or Irish, and was
curious how green these muffins would turn out. They obviously
became a little brown...

Green Tea Muffins
Makes 24
4 Cups All-Purpose Flour, sifted together
4 Tspn Green Tea Powder, sifted together
3 Tspn Baking Powder, sifted together
1 Tspn Baking Soda, sifted together
½ Tspn Baking Soda, sifted together
4 Eggs
1½ Cup Light Brown Sugar
½ Cup Vegetable Oil
1 Cup Milk
1 Cup Red Beans, boiled and softened.
Preheat oven
at 200C (400F) and place rack in the center of the oven.
In a large bowl mix flour, baking powder, baking soda, salt, green
tea powder and sugar together. Set aside.
In separate bowl whisk together eggs, vegetable oil and milk.
Pour egg mixture into the flour mixture, using a spatula fold in
ingredients. Fold in red beans.
Pour into a greased muffin tin or muffin cups until ½ -
⅔ full.
Bake for 20 minutes until deep golden brown, and after a toothpick
inserted in the center comes out clean.
Carefully remove muffins from the tins and place on a wire rack to
cool completely.
