Long weekend with endless baking!

Just to sum
up the endless baking over the long weekend, we made:
150 Muffins (Allspice Applesauce & Blueberry, Cranberry and Walnut, Milo and Banana Bran)
50 Mini Bāos (Red Bean Paste & Green Tea Lotus Seed Paste)
3 Pizzas (Made my own dough from scratch!)

1 Plum Pie

The muffins
were made for a potluck breakfast on Hari Raya Morning. I felt a
little like Izzie Stevens from Grey's
Anatomy. Mum, Kresna
and I made Applesauce Allspice
Muffins,
Honey Glazed Banana Bran
Muffins,
Berry Nutty Muffins
and Milo
Muffins (experimental). Because there were so many cooks and
everything was kindda messy and some points overlooked and so some
didn't turn so well... oh well.
The 50 Mini Bāos were also for the holiday potluck breakfast, the bāo dough used is the same as the one used in the Big Bāos, and the fillings were store bought red bean and green tea lotus seed paste.
Pizza!! Ever since Zorra from Kochtopf hosted World Bread Day '06 - making bread from scratch has been so much fun! I really enjoy the process creating something from nothing, it gives me a lot of pleasure as well to be able to cook for my friends and family! The pizza dough I made was from Chubby Hubby and 101 Cookbooks - the recipe they used are taken from Peter Reinhart's The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread. I used bread flour instead of all purpose and the recipe yielded me 3 portions for about 14"-18" sized pizzas! The baked pizza crust had a wonderful wonderful texture, perfect the way I love it - chewy and slightly crispy at the edges! Also I was very generous with finely chopped garlic on the pizzas which was really beautiful and satisfying!
The Plum Tart... My parents like plums and thought I'd make the gorgeous looking plum tart from Clotilde's Chocolate and Zucchini. The flavours from the walnut cream was wonderfully fused with the sweetness from the fresh plums! It was so deliciously grown up.
So this is explaining why my weight is going up and up!!
